There is a lot to say about Chicken Fried Rice. No matter the age, everyone loves Fried Rice in Sri Lanka. For every ceremony we have in our houses, we make fried rice for our guests. Not only that even for birthdays it’s typical for a Sri Lankan to make fried rice. Forget birthdays, we make Fried Rice even for almsgiving. That’s how popular this rice dish is.

Fried rice is also our go-to dish when we go out to eat, and if our days get busy and if we run out of time to make a meal for ourselves, we quickly make fried rice and eat it with some chili paste. In Sri Lanka, most of them use Basmati Rice to make fried rice. But if we don’t have Basmati Rice, we can use “Keeri Samba” or “Samba” to make this heavenly rice dish.

For Fried Rice, It is compulsory to add vegetables to fried rice and most people use steamed vegetables. But when it comes to me, I do not like that, I use fresh vegetables and add them fresh to the pan and cook for a little bit. This is simply because I love the freshness that we get when we bite into those fresh, lightly steamed veggies in our fried rice.

The next thing I should say is that, please please add some cabbage and spring onions when making this rice dish because it adds that yummy freshness to the fried rice. So today I have chosen Chicken as my protein to make this rice dish and you can use any protein that you like.

We all love fried rice. When we think of a special occasion like a party or a get-together, the first dish that comes to our mind is fried rice. Most of us love the fried rice that we get from a restaurant. So here is the recipe for making a restaurant-style chicken fried rice.

Instructions to marinate and fry the chicken

  1. Add water and 1 tsp of salt to Boil 400 g of Chicken Breast.

  2. Boil 400 g of Chicken Breast (for 20 minutes – High Heat).

  3. Then shred it into small pieces.

  4. Next add Salt, Turmeric Powder, and Pepper. 

  5. And let it marinate for 30 minutes.

  6. After 30 minutes fry the chicken until golden brown and set it aside.

Instruction of making chicken fried rice

  1. Next, add oil to a pan and add Ginger-Garlic Paste and Curry leaves

  2. Fry it until golden brown and add Onion.

  3. Add Carrot, and Cabbage and mix well.

  4. Let it fry and add Salt, Pepper, and Soya Sauce and mix well.

  5. Next, let it cook for 2 minutes (make sure to cover the pan with the lid)

  6. After that add 2 eggs add Salt & Pepper to taste and mix everything well.

  7. Then add Spring Onion (20g) and mix well in medium heat.

  8. Next, add the Cooked Rice.

  9. And mix well.

  10. And add the fried chicken and mix well.

  11. and the remaining Spring Onion (30g) and mix well.

  12. And Finally cook for not more than 1 minute and ENJOY!!!
