Spicy Egg Curry

So one large egg contains, 6% Vitamin A, 5% Folate, 7% Vitamin B5, 9% Vitamin B12, 15% Vitamin B2, 9% Phosphorus, and 22% Selenium of the required daily amount. Not only that eggs also had Vitamin D, Vitamin E, Vitamin K, Vitamin B6, Calcium, and Zinc.

So I am going to show you how to make a spicy egg curry. So when we are talking about eggs, the York has cholesterol and because of that when making this dish, I am adding Ginger and Garlic Paste. If you don't have any Ginger Garlic Paste, you can simply chop/ slice some garlic cloves and ginger and add them to the curry. Not only that, but even fried Fenugreek seeds also help with cholesterol. Also whenever I make something related to eggs, I never forget to add Black pepper because that will help with any stomach aches you might get. Some people tend to get a bad stomach ache after eating eggs and when you add this Black pepper it will reduce the chance of getting stomach aches. So today's curry is a little bit spicy and if you guys want it to be less spicy, you can always adjust the amount of Chili Powder being added to the curry.

So today I have brought you an easy recipe. It is a spicy egg curry that can be made within 15-20 minutes. This dish goes really well with bread, string hoppers, and rice. Give it a try and you will not regret it.

Ingredients
    Ingredients of Spicy Egg Curry
  • 1/2 Large Onion
  • Minced Garlic
  • 3 Garlic Cloves
  • 2 Green Chilies
  • 1 Tomato
  • 1 teaspoon Salt
  • 1/2 teaspoon Fenugreek Seeds
  • 1/2 teaspoon Turmeric Powder
  • 1/2 teaspoon Unroasted Curry Power
  • 2 teaspoons Chili Powder
  • 1 tablespoon Black Pepper
  • 250 milliliters Coconut Milk
  • Pandan Leaves
  • Curry Leaves
  • 2 tablespoons Oil(Coconut/Canola/Vegetable)
  • 1 teaspoon Mustard Seeds
  • 3-4 Dried Chilies
Instructions
    Preparation of Spicy Egg Curry
  1. First, put some salt and boil the eggs.
  2. And make sure to a hard boil and cut them halfway. 
  3. Next, add oil to the pan and add Minced Garlic, Curry Leaves, and Pandan Leaves to the pan and let it fry.
  4. After that, add Mustard Seeds & Dried Chili and fry well.
  5. Next, add Onion and mix well.
  6. After that, add Garlic Cloves, Green Chilies and mix well
  7. Next, add Tomato and let it cook.
  8. Next, Add Turmeric Powder, Chili Powder, Unroasted Curry Powder, Salt, and Fenugreek Seeds.
  9. Coat the Eggs well with the spice mix and add Coconut Milk.
  10. Stir and let it simmer for 3-4 minutes.
  11. After that, add Black Pepper.
  12. Finally, stir it well and ENJOY!!!
